INGREDIENTS
To marinated chicken (marinate and keep aside):
Ginger juice, Turmeric powder, Salt
For Gravy:
- 2 kg cut pieces of chicken
- 2 medium sized onions (chopped)
- 10 stalks lemongrass (blend)
- 1 tsp ginger
- 1 tsp garlic paste
- 2 medium size tomatoes (sliced)
- ½ tsp turmeric powder
- 2tbs chilli powder
- 1 tbs meat curry powder
- 2pcs cinnamon sticks
- 2 bay leaves
- ½ tbs cumin powder
- ½ tbs garam masala
- 2tbs oil
- Salt to taste
METHOD
Step 1
Fry the marinated chicken till it is ½ cooked. Dish out and drain excess oil and keep aside.
Step 2
Heat oil in wok temper lemongrass, cinnamon sticks and bay leaves.
Add chopped onions, tomatoes, ginger and garlic paste and sauté till fragrant then add 200ml water. Allow to boil and then add the half cooked chicken and mix well. Add meat curry power, turmeric powder and chilli powder continue stirring till chicken is cooked and gravy thickens. Add cumin powder, garam masala, lime juice, and curry leaves, salt and sugar to taste, mix well. Cook for another 2 minutes. Dish out and garnish with coriander leaves.
